Red Pumpkin Soup

Ingredients :

Red pumpkin – 600 gm

Onion – 50 gm

Red chili – 5 gm

Black pepper – 2 gm

Garlic cloves – 6-8

Bay leaves – 1-2

Rock salt to taste

Vegetable stock – 500 ml

Olive oil – 20 ml

Chopped parsley – 2-3 gm


Method of preparation:

  1. In a pan, add the pumpkin and dry roast it.
  2. Add the garlic, onions, pepper, crushed chili, salt, bay leaf and drizzle some olive oil on it and shake. 
  3. Blend it in a blender with some vegetable stock.
  4. Pour it into a pan and boil it with chopped parsley, olive oil, and salt.
  5. Shake well and serve hot.
