Italian Style Mushroom, Broccoli Hung Curd Salad!

When in doubt, top it with curd! This ecstatic salad has appetising vegetables like broccoli and mushrooms and to top it all hung curd blends in superiorly. This gives a flavoursome taste of healthy vegetables along with the nutritional values of yogurt. Give yourself the best of nourishment it deserves!

Ingredients

SALAD INGREDIENTS:

  • 1 Large diced Potato boiled and cooled (preferable kept in fridge overnight)
  • 9-10 nos Mushrooms cut and boiled for 3 minutes.
  • 150-200 gm broccoli cut
  • 1/2 tsp Paprika
  • 1 tsp Oregano
  • 1 tsp Olive Oil
  • Salt to taste

DRESSING INGREDIENTS:

  • 1 cup Hung curd – take about 1.5 cups curd in a muslin cloth and hang over the sink for at least 1 ½ to 2 hours.
  • 7=8 nos garlic clove minced properly
  • 1/4 tsp black pepper
  • Salt to taste

Instructions

METHOD-

  1. Heat olive oil in a non-stick pan and add diced potatoes. Roast it for 3minutes in low flame.

  2. Add mushrooms and broccoli and cook it for 5-10 minutes in medium flame. Till the potatoes become golden brown. Now add salt, paprika and oregano.

  3. Mix the dressing ingredients and keep it in the fridge.

  4. Before serving heat the hung curd salad mixture and the mix it with the dressing ingredients.
