1. Delicious Tangy Quinoa Salad with Fish Recipe

Ingredients

  1. Basa Fish Fillets – 500 grams
  2. Quinoa – 200 grams
  3. Salt – To taste
  4. Lemon Juice – 6 tablespoons
  5. Red Chilli Flakes – To taste
  6. Spring Onion Bulbs – 3 medium
  7. Parsley– handful
  8. Roasted Yellow Capsicum – 1
  9. Roasted Red Capsicum – 1
  10. Olive Oil – 2 tablespoons
  11. Sugar – 1 teaspoon
  12. Lemon Rind – 1/2 teaspoon
  13. Extra Virgin Olive Oil – 3 tablespoons

Method

  1. Pour 2 cups of water into a rice cooker and add quinoa and salt to it.
  2. Cover and cook until quinoa is nice and soft.
  3. Sprinkle salt on fish fillets.
  4. Add 3 tsps lemon juice and 3-4 pinches red chilli flakes and refrigerate for 15-20 minutes.
  5. Diagonally slice spring onion bulbs and roughly chop parsley.
  6. Remove seeds and chop roasted capsicums.
  7. Heat olive oil in non-stick pan and place fish fillets on it.
  8. Sprinkle salt, 2-3 pinches red chilli flakes and 2 tsps lemon juice on top. Cook, flipping sides, till both sides are evenly golden.
  9. Combine spring onion bulbs, parsley, capsicums, salt, sugar, lemon rind, remaining lemon juice and extra-virgin olive oil in a bowl.
  10. To this, add cooked quinoa and mix well.
  11. Put salad on a serving dish and place cooked fish on it.
  12. Serve warm.

2. Kabuli Chana and Red Kidney Bean Salad in Tangy Tamarind Dressing Recipe

Ingredients

  1. Boiled Chickpeas – 1/2 cup
  2. Boiled Red Kidney Beans (rajma) – 1/2 cup
  3. Tamarind Pulp – 4-5 tablespoons
  4. Oil – 2 tablespoons
  5. Dices Onion – 1
  6. Chopped Green Capsicum – 1
  7. Chopped Red Capsicum – 1
  8. Salt – To taste
  9. Black Pepper Powder – 1 1/4 teaspoons
  10. Mustard powder – 1 teaspoon
  11. Orange Marmalade – 1 1/2 teaspoons
  12. Extra Virgin Olive Oil – 1 teaspoon
  13. Iceberg Lettuce – 5-6 leaves

Method

  1. Heat oil in a non-stick pan.
  2. Add onion, green and red capsicums, salt and ¼ tsp black pepper powder and toss.
  3. Cook until vegetables are soft. Transfer to a bowl.
  4. Add rajma and chana in the bowl.
  5. To make the dressing, put tamarind pulp in a bowl.
  6. To this, add mustard powder, salt, 1 tsp black pepper powder and orange marmalade and whisk well.
  7. Add extra virgin olive oil and whisk again.
  8. Tear and place lettuce leaves on a serving place.
  9. Add dressing to salad and mix well.
  10. Place salad on lettuce and serve.

3. Grilled Fish Salad Recipe

Ingredients

  1. Boneless Fish like Basa – 2 pieces
  2. Boiled and Peeled Potatoes – 2
  3. Olive Oil – 3 tablespoons
  4. Garlic – 15 cloves
  5. Salt – To taste
  6. Cumin Powder – 1 teaspoon
  7. Crushed Peppercorns – 1 tablespoon
  8. Diced Red Capsicum – 1
  9. Diced Yellow Capsicum – 1
  10. Diced Green Capsicum – 1
  11. Lemons – 3
  12. Pickled Jalapenos – 2-3

Method

  1. Dice the potatoes.
  2. Heat 2 tbsps olive oil in non-stick pan, add garlic cloves and sauté until light brown.
  3. Sprinkle some salt on a plate. Add cumin powder and crushed peppercorns and mix well.
  4. Coat the fish pieces with this mixture.
  5. Add all capsicum pieces to pan and toss. Add salt and toss again. Sauté for 2-3 minutes.
  6. Cut 2 lemons into thick slices. Transfer sautéed vegetables to a bowl.
  7. Add 1 tbsp oil to the same pan. Place 4 lemon slices in two groups on the pan and place one fish piece on each of them and cook for 2 minutes.
  8. Place potatoes in a bowl. Chop jalapenos and add and mix well.
  9. Squeeze juice of 1 lemon and add.
  10. Flip fish pieces along with lemon slices and cook until both sides are equally done.
  11. Transfer vegetables to a serving dish. Sprinkle salt on top and drizzle 2 tsps olive oil.
  12. Place cooked fish pieces on top along with lemon slices and serve.

4. Waldorf Salad Recipe

Ingredients

  1. Mayonnaise – 3 tablespoons
  2. Pineapple Slices – 4
  3. Apples – 2
  4. Walnuts – 1/2 cup
  5. Celery – 2-inch stick
  6. Iceberg Lettuce Leaves – Handful
  7. Salt – To taste
  8. Crushed Black Peppercorns – 1/2 teaspoon

Method

  1. Chop celery roughly and put into a bowl.
  2. Chop pineapple slices into chunks and put into the same bowl.
  3. Cut the apples into halves, remove core and cut into chunks and add to the same bowl.
  4. Add the walnuts and mayonnaise and mix well.
  5. Tear a few iceberg lettuce leaves and add.
  6. Add salt and crushed black peppercorns and mix well again.
  7. Transfer into a serving plate and serve garnished with a few walnuts.

5. Refreshing Chilled Melon Ball Salad Recipe

Ingredients

  1. Watermelon – ¼
  2. Muskmelon  – 1

For The Dressing

  1. Fresh Orange Juice – 2 tablespoons
  2. Salt – To taste
  3. Black Salt – To taste
  4. Crushed Black Peppercorns – 3-4
  5. Lemon Juice – 2 teaspoons
  6. Torn Fresh Mint Leaves – Handful

Method

  1. Using a small scoop, scoop out small balls from the watermelon, discarding the seeds.
  2. Cut the muskmelon in half and scoop out small balls from the centre. Discard all the seeds.
  3. Put the melon balls in a bowl and leave it in a refrigerator to chill.
  4. To make the dressing, take fresh orange juice in a bowl.
  5. Add salt, black salt, black peppercorn and lemon juice. Mix well.
  6. Add mint leaves and mix well.
  7. Now place the melon balls in a serving bowl, pour the dressing over and serve chilled.
